How to Make Your Own Paleo Vegan Ice Cream Cake: 7 Ways to make a delicious ice cream cake

Plant based ice cream is not a popular ice cream to whip up.

That said, there are plenty of ways to enjoy vegan ice cream, and these seven easy recipes will keep you busy for days. 

The recipes below are vegan, but they can easily be adapted to your own preferences.

You’ll also need a basic ice cream maker (or ice cream scoop) to make these ice cream cakes. 

For the most part, you’ll need a blender, a food processor, and a mixer to make this recipe.

To make vegan ice creams, mix together almond milk, vegan butter, coconut oil, vegan shortening, and powdered sugar.

Then, add vegan vanilla extract, and mix for a few seconds. 

(The almond milk can be left out.

This recipe makes enough to make about 2-3 ice cream cakes.) 

The coconut oil and vegan shortens the process.

To use the ice cream in this recipe, add 1 tablespoon of the vegan shortener to 1 tablespoon almond milk and stir.

Then add 1/2 teaspoon of vegan vanilla to the ice creamer.

Blend until smooth and creamy. 

If you want a little more of an intense flavor, you can use the vegan chocolate or coconut oil. 

In a large saucepan, melt the butter over medium-low heat, and add the almonds and coconut oil to the pan.

Bring to a simmer and cook for about 10 minutes, until the butter is melted and the almond milk has thickened.

Stir in the powdered sugar and the vanilla.

Cook until thickened and smooth. 

Spread the icecream onto the ice Cream Maker (or Food Processor), and pour in the batter.

If you don’t have a large pan, use a 9×13 pan.

If your ice cream machine has a removable lid, you may want to use a bowl. 

When it’s all done, place a cupcake tray in the center of the cake. 

Repeat the same process until all the layers are covered. 

I would suggest using a spoon to spread the frosting.

You can also make the ice-cream more frosting-like by mixing the powdered chocolate in a separate bowl.

This will give you more of a cookie-like texture. 

Now, top the cake with the frosted chocolate. 

Slice the ice cakes in half, and place the halves in a single layer on a baking sheet. 

Let the ice ice cream cool, then top with the strawberry jam. 

Add the jam to the top of the ice and bake for about 20 minutes, or until the jam is bubbling. 

You’ll probably need to leave the cake in the freezer for at least an hour to completely set. Enjoy!
